Sous Chef Omar Collazo draws on his Latin American Heritage to playfully weave flavors of chilies, coriander, cumin and cilantro into unexpected and delicious creations including Ancho Chili Braised Pork Spare Ribs with a Papaya Mojito Salsa, a Duo of Prickly Pear and Chipotle Pepper Marinated Duck Breast and Confit Stuffed Poblano Peppers.
